Chicken Kebab with Yoghurt Marinade


Ingredients:

Yoghurt Marinade:
3 cloves garlic, crushed with salt
1 T. olive oil
1/3 c. low-fat yoghurt
black pepper
1/2 small onion, grated

6 boneless half chicken breasts, cubed
red or black pepper

1.  Combine the marinade ingredients and rub them into the cubes of chicken.  Set aside for at least 1 hour.

2.  Thread pieces of chicken onto skewers and broil in the oven or over charcoal.  Very little cooking time is required, only around 7 minutes.
