Cauliflower Tahini Salad


Ingredients:

1 head cauliflower, broken into florets
2 tomatoes, coarsely chopped
3/4 c. minced parsley
Tahini dressing (recipe follows)
Garnish:
minced parsley
red pepper

1.  Steam the cauliflower in salted water until crispy-tender.

2.  Toss the cooked vegetables with the tomatoes, parsley, and the dressing.  Arrange on a platter and garnish with parsley and red pepper.

Tahini Dressing

Ingredients:

2 cloves garlic, crushed with salt
1/4 c. lemon juice
1/4 c. tahini
1/4 c. olive oil
1/4 c. low-fat yoghurt or milk

1.  Combine all ingredients in a jar with a tight-fitting lid, cover, and shake to blend.  Or puree in a food processor.
